Hello!
If you are not a cookie aficionado, you may want to put forth your best argument as to why there is no such thing as a healthy cookie.
It would definitely have to be your very best argument because I'm here to open your mind to the ultimate healthy cookie that you just cannot eat only one of.
How can this be you think?
A cookie is made up of sugar, sugar, more sugar + fats all mixed up with nutrition deficit ingredients.
If you can pull out the following ingredients from your pantry and get to putting this recipe together you will see how easy this works.
I love to experiment with baking, measuring is sometimes suspect, but through trial and error along with pure determination this recipe came to be.
You can substitute your favourites for the nuts, dates, eliminate the cinnamon or chocolate (but really why would you want to) as long as the base is maintained you will end up with a deliciously, healthy cookie.
I use organic ingredients where I can, and Italian flour which is non GMO, simply processed and still packing the nutrients it was meant to have.
RECIPE:
Dry
1 cup each of flour, rolled oats, coconut flakes
1/2 cup each of ground flaxseed, pumpkin seeds, dates
1/4 cup chia seeds
1 cup chopped walnuts
1 cup of chopped Lindt milk chocolate (my favourite)
1 teaspoon cinnamon
Wet
Whisk together -
1 egg
1/2 cup rice bran oil (grape seed oil, any healthy oil that substitutes for butter)
1/4 cup maple syrup
1/3 cup cashew milk
Gently stir wet ingredients into dry ingredients. Add more cashew milk if needed.
Using a cereal sized spoon, drop by the spoonful onto a parchment paper covered cookie tray.
Bake at 350 degrees Fahrenheit, preheated, for approximately 20 minutes (depending on your oven) until golden brown.
Remove from oven & immediately cool on a rack.
I think the only argument in favour of those skeptical of the "healthy" label would involve the number of cookies consumed, and just maybe the chocolate but from a chocoholic I beg to differ!
I know someone + his daughter who can plow through almost a whole tray, look you straight in the eye and totally deny they did any such thing.
Hmmmmmmmmmm someone(s) not telling the truth!
